Feast Your Eyes: Split Pea Soup

Hello my lovelies, what a perfect day for some comfort food! I am no chef,  but a good recipe deserves to be shared and this one would be pretty perfect for a day like today...and after a few changes to the original (from Canadian Living) to make it easier,  I think I've perfected  it!
 
Here's what you'll need:

2tbsp butter
2-3 carrots, diced
2-3 ribs of celery diced
1 onion, diced
2 cloves of garlic, minced
1-3/4 cups of dried yellow split peas
2 bay leaves
1tsp dried thyme
3/4 tsp salt
1/4 tsp pepper
half a package of bacon chopped (or more or less depending on how much you like bacon)

In a large pot melt your butter over medium heat and cook carrots, celery, onion, and garlic until softened and golden, about 15 minutes.

Stir in split peas, bay leaves, thyme, salt and pepper and cook stirring for 2 minutes.

Stir in 8 cups of water, add bacon and bring to a boil.

Reduce heat and let it simmer for 1.5 to 2 hours

Serve it will some nice crusty bread...sooo good!
This made 7-8 big servings....
